  • 1 ripe avocado (approximately 5 oz)
  • Handful of chives, chopped
  • 2.12 oz cucumber, peeled, deseeded, and chopped
  • 1 1/2 tbsp lemon juice

Layer 3 – Shrimp Salad Filling:

  • 9.88 oz whole North Atlantic prawns
  • 1/4 small red onion, finely chopped
  • 1.59 oz mayonnaise
  • 1.41 oz crème fraîche
  • Zest and juice of 1/4 lemon

To Decorate:

  • 2-3 baby cucumbers, thinly sliced lengthways
  • 6.35 oz full-fat cream cheese
  • A few pea shoots
  • Fresh edible flowers (optional)

Instructions:

  1. Prepare the Bread: Remove the crust and cut the bread into 1cm thick slices. Butter both sides of each slice. You’ll need 4 slices for the layers.
  2. Layer the Ingredients:
    1. First Layer: Combine smoked salmon, cream cheese, crème fraîche, lemon zest and juice, and horseradish. Add half of the chopped dill and spread on the first slice. Top with the second slice.
    2. Second Layer: Mash the avocado and mix with chives, cucumber, and lemon juice. Spread this mixture on the second slice and top with the third.
    3. Third Layer: Mix prawns, red onion, mayonnaise, crème fraîche, lemon zest, and juice. Spread over the third slice and top with the fourth.
  3. Decorate: Cover the entire cake with cream cheese. Decorate the sides with cucumber slices and the top with prawns, pea shoots, and optional edible flowers.
  4. Chill: Refrigerate the cake for an hour before serving to allow the flavors to meld beautifully.
